1 tsp salt

1 tsp smoked paprika

6 garlic cloves, minced

1-inch piece fresh ginger, grated

2-3 scotch bonnet peppers, finely chopped (adjust to spice preference)

4 green onions, chopped

1 small onion, chopped

1 tbsp dried thyme (or 2 sprigs fresh thyme)

1/2 cup orange juice

Instructions:

Combine Ingredients:

In a large mixing bowl, combine the soy sauce, apple cider vinegar, olive oil, brown sugar, Worcestershire sauce, and fresh lime juice. Whisk until the sugar is dissolved.

Stir in the allspice, cinnamon, nutmeg, black pepper, salt, smoked paprika, minced garlic, grated ginger, chopped scotch bonnet peppers, green onions, chopped onion, and thyme.

Incorporate Orange Juice:

Blend (Optional):

For a smoother sauce, you can blend the mixture in a blender or food processor until desired consistency is reached.

Marinate:

Use the jerk sauce immediately as a marinade for chicken, pork, or vegetables, or store it in an airtight container in the refrigerator for up to a week.

Enjoy:

Grill, bake, or sauté your marinated proteins or veggies, and enjoy the bold, spicy flavors of Jamaican jerk cuisine!
