Garlic Herb Roasted Veggies Recipe

Ingredients:
For the Roasted Veggies:

  • 1 lb baby potatoes (red or gold), halved
  • 1 cup baby carrots (or sliced regular carrots)
  • 1 cup fresh green beans, trimmed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

Instructions:

  1. Preheat the Oven: Preheat the oven to 425°F (220°C).
  2. Prepare the Veggies: In a large bowl, combine the halved potatoes, baby carrots, and trimmed green beans.
  3. Mix the Garlic Herb Seasoning: In a small bowl, mix together the minced garlic, dried Italian seasoning, smoked paprika, salt, and black pepper.
  4. Drizzle with Olive Oil and Season: Drizzle the olive oil over the veggies and sprinkle the garlic herb seasoning mixture evenly.
  5. Toss to Coat: Toss the veggies to coat them evenly with the oil and seasoning mixture.
  6. Spread on a Baking Sheet: Spread the veggies out in a single layer on a baking sheet lined with parchment paper.
  7. Roast in the Oven: Roast the veggies in the preheated oven for 25-30 minutes, or until they’re tender and caramelized, flipping them halfway through.
  8. Serve: Serve the Garlic Herb Roasted Veggies hot, garnished with fresh herbs if desired.
