Ingredients:
For the Roasted Veggies:
- 1 lb baby potatoes (red or gold), halved
- 1 cup baby carrots (or sliced regular carrots)
- 1 cup fresh green beans, trimmed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried Italian seasoning
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
Instructions:
- Preheat the Oven: Preheat the oven to 425°F (220°C).
- Prepare the Veggies: In a large bowl, combine the halved potatoes, baby carrots, and trimmed green beans.
- Mix the Garlic Herb Seasoning: In a small bowl, mix together the minced garlic, dried Italian seasoning, smoked paprika, salt, and black pepper.
- Drizzle with Olive Oil and Season: Drizzle the olive oil over the veggies and sprinkle the garlic herb seasoning mixture evenly.
- Toss to Coat: Toss the veggies to coat them evenly with the oil and seasoning mixture.
- Spread on a Baking Sheet: Spread the veggies out in a single layer on a baking sheet lined with parchment paper.
- Roast in the Oven: Roast the veggies in the preheated oven for 25-30 minutes, or until they’re tender and caramelized, flipping them halfway through.
- Serve: Serve the Garlic Herb Roasted Veggies hot, garnished with fresh herbs if desired.
