This is an easy, quick recipe that makes 6 large sandwich biscuits.
Ingredients
For the biscuit dough:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp sugar
- 6 tbsp cold butter, cubed
- 3/4 cup cold milk, plus 2 tbsp
- 1/2 cup shredded cheddar cheese
For the filling:
- 12 slices smoked ham or turkey ham
- 6 slices Swiss cheese or mozzarella
- 2 tbsp Dijon mustard, optional
- 2 tbsp melted butter for brushing

Instructions
1. Prep the oven and dough:
- Preheat oven to 425°F or 220°C. Lightly grease an aluminum tray or baking dish.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Add cold butter cubes. Use your fingers or a pastry cutter to work the butter into the flour until the mixture looks like coarse crumbs. You should still see small pea-sized pieces of butter.
- Stir in the shredded cheddar.
- Pour in the cold milk gradually and mix with a spoon just until the dough comes together. Do not overmix or the biscuits will be tough.
2. Shape and assemble:
- Lightly flour a work surface. Turn the dough out and pat it into a 1-inch thick rectangle.
- Use a 3-inch round cutter to cut out 12 biscuit rounds. You will need to gently re-pat the scraps once to get all 12.
- Place 6 of the rounds in the prepared tray. If using mustard, spread a thin layer on each.
- Layer 2 slices of ham and 1 slice of cheese on each round.
- Top with the remaining 6 biscuit rounds to make sandwiches. Press down very lightly.
3. Bake:
- Brush the tops with the 2 tbsp of melted butter. This helps them brown.
- Bake for 18 to 22 minutes, until the tops are golden brown and the cheese is melted and bubbling.
- If the tops brown too fast, loosely cover with foil for the last 5 minutes.
4. Serve:
Let cool for 5 minutes before serving. The cheese will be very hot. Best eaten warm.
